Werqa Randa Rosa. Our tribute to the aromatic Bay Leaf.
Used in many traditional Maltese culinary delights, the bay leaf ( werqa randa) is an aromatic herb that is widely used in the Mediterranean.
In Malta we love adding it to stews and sauces most especially the traditional Stuffat tal-Fenek ( Rabbit Stew). The tradition is to add it to the cooking pot and lifting it before serving to enjoy its essence and flavour. According to my Grandma, the secret of this vital addition to many dishes is one to be disclosed only to close of kin.
